Thinly slice chorizo on the diagonal, into 16 slices and panfry until crisp. Place chorizo slices on a serving platter and top with basil leaves.
Top with John West Mackerel and almonds. Sprinkle with black pepper. Serve.
Dollop a small amount of aioli on each bite just before serving.
