Delicious served as part of an antipasto platter

- 2 x 110g cans John West Sardines in Oil, drained
- 1 clove garlic, crushed
- 2 tablespoons extra virgin olive oil
- 1 tablespoon chopped fresh parsley
- Finely grated rind and juice of ½ lemon
Place drained John West Sardines into a shallow glass or ceramic dish. Place garlic, olive oil, parsley, lemon rind and juice into a bowl. Whisk to combine and pour over sardines.
Cover and marinate in refrigerator for 20 minutes. Serve as part of an antipasto platter or a salad meal.
Add 2 tablespoons Leggo’s Tomato Paste to marinade for a tasty addition.
