A combination of pear, rocket and salmon, with a honey drizzle

- 210g can John West Red Salmon, drained
- 1 large or 2 small pita breads
- 50g Danish fetta cheese
- 1½ cups baby rocket leaves
- ¼ cup fresh mint leaves
- ½ small pear, sliced
- 2 tablespoons honey
- Pinch cinnamon
- Pistachio nuts for garnish
Drain John West Red Salmon and flake into chunky pieces.
Place pita bread under a hot grill until crisp. Spread fetta cheese over pita bread and arrange rocket, mint, pear slices and salmon on top.
Combine honey and cinnamon in a small bowl, heat in a microwave oven for 5-10 seconds to warm. Drizzle over salad and garnish with pistachio nuts.
Rocket can be substituted with baby spinach leaves and the pear with apples.
