A delicious salad with John West Salmon Tempters with quinoa, rocket, tomatoes and toasted pepitas.

Cook time:15 mins
Cook quinoa following packet directions. Drain, rinse and cool.
Combine all ingredients except pepitas in a serving bowl. Toss gently.
Sprinkle with pepitas and serving.
Use white quinoa or couscous, if desired.
