Light and delicious finger food that can be made ahead of time.

- 6 x 15cm rice paper rounds
- 2 x 95g cans John West Salmon Tempters - Sweet Chilli & Lime
- 12 coriander leaves
- 100g bean sprouts
- 1 Lebanese cucumber cut into julienne strips
- Light soy sauce
- 1 lime, cut into wedges for serving
Prepare rice paper rounds one at a time, following packet directions. Place on a board and cut each round in half. Spoon 2 teaspoons of John West Salmon Tempter at one end of the semi-circle and a coriander leaf at the opposite end.
Top the salmon with 8-10 bean sprouts and 2-3 cucumber strips. Roll rice paper rolls starting with the salmon end and serve with light soy sauce for dipping and lime wedges.
Cover prepared rolls with plastic wrap and refrigerate until ready to serve to prevent them drying.
