Roasted Capsicum And Anchovy Bruschetta

Ingredients

  • 12 baguette slices
  • Oil spray
  • ½ clove garlic
  • 1 roasted red capsicum, cut into strips
  • 1 roasted yellow capsicum, cut into strips
  • 45g can John West Anchovies in Olive Oil, drained
  • Lemon flavoured olive oil, for drizzling
  • Basil, for garnish

Instructions

Step 1

Spray both sides of bread with oil and cook in a preheated oven at 200°C for 5-8 minutes until golden, turning once. Rub both sides of bread with garlic clove.

Step 2

Top with capsicum strips and John West Anchovies, drizzle with oil, garnish with basil and serve immediately.

Tasty Tip!

To save time, roasted capsicum strips can be purchased from all leading supermarkets and delis.
