Description

A play on soft shell tacos perfect as finger food.

Ingredients

  • 400g can Edgell Black Beans, drained and rinsed
  • 420g can Edgell Corn Kernels, drained
  • 2 x 95g cans John West Tuna – Tangy Jalapeno
  • Finely grated zest of 1 lime
  • ⅓ cup coriander leaves, roughly chopped
  • 3 large tortilla wraps
  • Red capsicum strips, for garnish

Instructions

Step 1

Combine Edgell Black Beans, Edgell Corn Kernels, John West Tuna, coriander and lime.

Step 2

Warm tortillas following packet directions. Cut each tortilla in quarters. Shape each to form a cone and fill with ¼ cup of filling. Secure with a toothpick, string or serviette.

Step 3

Garnish with capsicum and extra coriander, if desired.

Tasty Tip!

Diced avocado may be added to filling. Serve with sour cream or cheese, if desired.
