Place potato in a microwave safe dish, cover and cook on High for 5 minutes or until soft. Transfer to a large bowl and mash.
Stir in undrained John West Tuna, spring onion, carrot, egg, coriander, breadcrumbs and lime zest until well combined. Shape into 6 patties. Cover and refrigerate for 30 minutes.
Heat 1 tablespoon oil in a large frypan over medium-high heat, cook patties in batches for 2-3 minutes on each side or until golden in colour, using remaining oil as required. Serve with an Asian dipping sauce such as sweet chilli.
