Mini brioche rolls with John West Tuna and corn and tomato salsa

- ¼ cup frozen corn, cooked and cooled
- 4 cherry tomatoes, quartered
- 1 spring onion, chopped
- 2 small brioche dinner rolls
- 95g can John West Thai Nam Jim & Tuna
- Parsley or coriander, for garnish
Combine corn, tomatoes and onion.
Slice rolls in half and fill with John West Tuna and corn and tomato salsa. Garnish with parsley or coriander and serve immediately.
Brioche rolls can be purchased from most Asian supermarkets or bakeries.
