To assist with even browning of pan fried salmon, always cook flesh side down first, even when skinless. The entire surface of the flesh sears on the hot pan before the muscle can contract. Once golden, turn to finish cooking. If you prefer salmon cooked all the way through for best results cook in the oven. If cooking in a pan, try covering with a lid. Cut salmon in half lengthways, thread onto skewers and panfry or BBQ.
