Tuna Bruschetta

Perfect for summer entertaining, goat cheese topped sourdough with bruschetta mix and tuna.

Ingredients

  • 2 tomatoes, diced
  • 1 tablespoon extra virgin olive oil
  • ¾ cup chopped roasted red capsicum
  • 2 teaspoons balsamic vinegar
  • 2 tablespoons chopped fresh basil, plus extra leaves, for garnish
  • 8-10 slices sourdough bread, grilled or toasted
  • 250g marinated goat cheese or Persian feta
  • 425g can John West Chunk Style Tuna in Springwater, flaked

Method

STEP 1
Combine tomato, capsicum, oil, balsamic vinegar and basil in a small bowl. Season to taste.
STEP 3
Spread grilled bread evenly with goat cheese. Top with tomato mixture followed by John West Tuna. Garnish with extra basil leaves and serve immediately.
Tips
Try using spreadable cream cheese as an alternative to goat cheese.
