Prawn, Avocado Summer Salad


An ideal salad for the summer! Perfect to serve as a light dish for lunch or as an entree for dinner.

  • 4 cups mixed salad leaves or baby rocket
  • 1 packet John West Chilled Prawns with Cocktail Sauce
  • 1 avocado, sliced
  • 125g can Edgell Super Sweet Corn Kernels, drained
  • 1 tablespoon mayonnaise
  • Grated rind of ½ lime


Step 1

Arrange salad leaves, John West Chilled Prawns and avocado on a serving plate, sprinkle with drained Edgell Super Sweet Corn Kernels.

Step 2

Combine John West Cocktail Sauce, mayonnaise and lime, drizzle over salad and serve.

Tasty Tip!

Sliced or diced mango or peach can be added to the salad.
