A quick and easy recipe for prawn wonton nibbles that look and taste fantastic.

- 260g pack chilled John West Prawns with Cocktail Sauce
- 1 tablespoon fresh chives, chopped, plus extra for garnish
- 1 cup vegetable oil
- 10-11 wonton skins
- 1 cup shredded cos lettuce
- ½ red capsicum, finely diced
Remove and discard tails from John West Prawns. Mix prawns, cocktail sauce and chives in a bowl. Keep chilled until ready to serve.
Heat oil in a shallow frypan over medium heat. Fry wonton skins on both sides until golden brown.
Place fried wontons onto a large platter and top each with lettuce, prawns, a sprinkle of chives and capsicum.
Alternatively, try using thinly sliced spring onion instead of chives.
