A light and easy to prepare starter for entertaining with ever popular John West Red Salmon

- 415g can John West Red Salmon, drained and flaked
- 1/4 cup chopped water chestnuts
- 1 lime
- 6 butter lettuce leaves
- 1 small avocado, sliced
- 1/4 cup whole egg mayonnaise
- 1/2 teaspoon sugar
Gently toss together John West Red Salmon, water chestnuts and finely grated rind of the lime.
Place lettuce leaves onto serving dishes. Arrange avocado and salmon mixture on lettuce. Cover and chill until ready to serve.
Combine mayonnaise with 3 teaspoons lime juice and sugar. Drizzle over salmon before serving.
Avocado can be substituted with mango. Finely shredded lime rind can be used as a garnish.
