Salt And Pepper Squid With Sesame Noodles


A quick and healthy dish packed with veggies for lunch or dinner.

  • 150g rice noodles
  • 280g packet John West Fresh Salt and Pepper Squid
  • 1 tablespoon vegetable oil
  • 1 clove garlic, crushed
  • 1 small red capsicum, finely sliced
  • 1 small yellow capsicum, finely sliced
  • 100g snow peas, finely sliced
  • 2 spring onions, sliced
  • 2 tablespoons roasted unsalted peanuts, roughly chopped
  • 2 tablespoons light soy sauce
  • 2 teaspoons sesame oil


Step 1

Prepare noodles following packet directions. Drain and set aside. Prepare John West Salt and Pepper Squid following packet directions. Set aside and keep warm.

Step 2

Heat oil in a large pan or wok and add garlic, vegetables and onions. Stir-fry for 1-2 minutes or until vegetables have heated through but still have a bit of crunch.

Step 3

Add the drained noodles and remaining ingredients and continue to stir-fry for 2-3 minutes or until noodles have heated through.

Step 4

To serve, place noodle and vegetable stir-fry in bowls and top with the warm squid.

Tasty Tip!

Baby corn, broccolini, bok choy or any of your other favourite vegetables may be used.
