A mix of tuna and vegetables with a tangy coconut dressing.

- 425g can John West Tuna in Brine, drained & flaked
- 420g can Edgell Four Bean Mix, drained
- ¼ cup finely chopped spring onions
- 1 mango, sliced
- ½ cup low fat mayonnaise
- 2 teaspoon lime rind
- 1 tablespoon lime juice
- 2 tablespoons desiccated coconut
Combine drained, flaked John West Tuna, drained Edgell Four Bean Mix, spring onions and mango and place onto a serving dish.
Combine mayonnaise, lime rind, juice and coconut and spoon over salad.
Sliced apple or pear can be substituted for the mango.
