Ingredients
- 2 tablespoons mayonnaise
- 1 tablespoon chopped fresh parsley
- 1 teaspoon curry powder
- 1 spring onion, finely chopped
- 2 hard boiled eggs, chopped
- 105g can John West Red Salmon, drained and flaked
- 1 cup finely shredded lettuce
- 4 thick slices fresh wholemeal bread, lightly buttered
Method
STEP 1Combine mayonnaise, curry powder, parsley and spring onion in a bowl. Fold in cooked eggs and John West Red Salmon.
STEP 2
Top 2 bread slices with salmon filling and lettuce. Sandwich together with remaining bread. Cut & serve.
Tips
Assemble sandwiches up to 2 hours before required, cover and refrigerate.
