Curried Salmon & Egg Sandwiches

Curried egg sandwiches with the addition of delicious salmon.

Ingredients

  • 2 tablespoons mayonnaise
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon curry powder
  • 1 spring onion, finely chopped
  • 2 hard boiled eggs, chopped
  • 105g can John West Red Salmon, drained and flaked
  • 1 cup finely shredded lettuce
  • 4 thick slices fresh wholemeal bread, lightly buttered

Method

STEP 1
Combine mayonnaise, curry powder, parsley and spring onion in a bowl. Fold in cooked eggs and John West Red Salmon.
STEP 2
Top 2 bread slices with salmon filling and lettuce. Sandwich together with remaining bread. Cut & serve.
Tips
Assemble sandwiches up to 2 hours before required, cover and refrigerate.
