Ingredients

  • 1 large seeded bagel, halved and toasted
  • 1 cup baby spinach leaves
  • 3 eggs, scrambled
  • 200g can John West Herring Fillets in Tomato Sauce
  • Parsley, for garnish

Method

STEP 1
Arrange spinach leaves over bagel halves. Top with scrambled egg.
STEP 2
Arrange John West Herring over scrambled egg. Drizzle remaining sauce from can over herring. Garnish with parsley to serve.
Tips
English muffins, panini, or sourdough toast can be substituted for bagels.
