Ingredients
- ½ cup chopped potato, cooked and cooled
- 1 cup baby rocket leaves
- ¼ cup chopped fresh herbs (dill, parsley)
- 125g can John West Tuna Slices - Olive Oil Blend, drained, oil reserved
- 70g can Edgell Snack Time Lentils with Capsicum, Tomato & Herbs
- Finely grated zest and juice of ½ lemon

Method
STEP 1Combine potato, rocket and herbs in a small bowl.
STEP 2
Flake John West Tuna Slices over salad and top with Edgell Lentils.
STEP 3
Sprinkle salad with lemon zest. Combine lemon juice with reserved tuna oil, season and drizzle over salad. Serve.
Tips
Rocket can be switched out for your favourite salad veggies.
