Lentil Tuna and Rocket Salad

A fresh and healthy light meal for one, with flavoursome lentils, tuna slices, potato, and fresh herbs.

Ingredients

  • ½ cup chopped potato, cooked and cooled
  • 1 cup baby rocket leaves
  • ¼ cup chopped fresh herbs (dill, parsley)
  • 125g can John West Tuna Slices - Olive Oil Blend, drained, oil reserved
  • 70g can Edgell Snack Time Lentils with Capsicum, Tomato & Herbs
  • Finely grated zest and juice of ½ lemon

Method

STEP 1
Combine potato, rocket and herbs in a small bowl.
STEP 2
Flake John West Tuna Slices over salad and top with Edgell Lentils.
STEP 3
Sprinkle salad with lemon zest. Combine lemon juice with reserved tuna oil, season and drizzle over salad. Serve.
Tips
Rocket can be switched out for your favourite salad veggies.
