  • ¼ cup red quinoa
  • 130g can John West Chunk Style Salmon in Olive Oil Blend, drained
  • ½ cup baby rocket leaves
  • ½ cup mini roma tomatoes, halved
  • 1 tablespoon chopped fresh parsley leaves
  • 1 tablespoon toasted pepitas

Method

STEP 1
Cook quinoa following packet directions. Drain, rinse and cool.
STEP 2
Combine cooled quinoa, John West Salmon, rocket, tomatoes and parsley in a serving bowl. Sprinkle with pepitas and serve.
Tips
Use white quinoa or couscous, if desired.
