Ingredients
- 1 teaspoon extra virgin olive oil
- ½ small zucchini, thinly sliced
- 1 cup baby spinach leaves
- 95g can John West Salmon Tempters - Lemon & Cracked Pepper
- 150g pouch Vetta Ready Pasta Classic Spirals
- Finely chopped fresh dill, to serve
Method
STEP 1Heat oil in a non stick frypan over medium heat, cook zucchini slices, turning until golden on both sides. Add spinach to pan, turn down heat and gently wilt. Add John West Salmon. Remove pan from heat.
STEP 2
Cook pasta following packet directions. Return pan to a low heat and toss through cooked pasta to combine. Season to taste, serve topped with dill.
Tips
Add currants and chopped sundried tomatoes in STEP 1 for a Sicilian twist.
