Salt and Pepper Calamari Salad

A fresh salad of shaved fennel and fresh herbs topped with salt and pepper calamari.

Ingredients

  • ½ cup snow peas, sliced lengthwise
  • ¼ cup fresh mint leaves, chopped
  • ½ cup fresh coriander leaves, roughly chopped
  • 1 small fennel, thinly sliced
  • 1 small head oak leaf lettuce
  • 1 long green chilli, sliced
  • 360g packet frozen I&J Salt & Pepper Calamari
  • ⅓ cup Vietnamese dressing

Method

STEP 1
Combine snow peas, herbs, fennel and lettuce leaves in a large bowl and toss to combine. Chill.
STEP 4
Cook frozen I&J Calamari following packet directions.
STEP 3
Serve salad topped with calamari, drizzled with ½ the Vietnamese dressing. Serve remaining dressing on the side.
Tips
Spice the salad up with extra chilli.
