Ingredients
- ½ small bunch broccolini
- 45g soba noodles, cooked and cooled following packet directions
- 1 teaspoon furikake* (see tip) or toasted sesame seeds
- ¼ avocado, cut into a wedge
- 95g can John West Salmon Tempters - Teriyaki
- 1 baby cucumber, julienned
- 1 egg, hardboiled, peeled and cut in half
- Pickled ginger, to taste
Method
STEP 1Blanch broccolini in boiling water for 2-3 minutes or until just tender. Remove broccolini with a slotted spoon or tongs, refresh in cold water and set aside.
STEP 2
Place soba noodles in same boiling water and cook following packet directions. Once cooked, drain the soba noodles in a colander and place with under cold running water until cooled.
STEP 3
Place furikake (or sesame seeds) on a small plate and dip one side of the avocado wedge into mixture to coat. Set aside.
STEP 3
Arrange noodles in serving bowl, top with John West Salmon, broccolini, avocado, cucumber and egg. Add desired amount of pickled ginger. Serve immediately.
Tips
Furikake is a Japanese rice seasoning often made with dried seaweed (nori), salt and sesame seeds and can be found in most supermarket Asian aisles.
