Ingredients
- 8 slices baguette
- 1 small avocado, thinly sliced
- 125 grams can John West Mackerel Fillets in Brine, drained
- Pickled red onion
- 2 Tbsp. toasted pumpkin seeds
- Fresh coriander leaves
Method
STEP 1Lightly toast or chargrill baguette slices.
STEP 2
Top each slice with avocado, John West Mackerel, a little pickled onion and season with black pepper.
STEP 3
Sprinkle with pumpkin seeds and garnish with coriander when ready to serve.
