Salmon, Tomato, Chilli & Basil Pasta

Sweet cherry tomatoes make a fresh sauce with salmon for pasta.

Ingredients

  • 1 teaspoon extra virgin olive oil
  • 1 small clove garlic, crushed
  • 8 cherry tomatoes, cut in half
  • Pinch of chilli flakes or to taste
  • 5 large fresh basil leaves, torn plus extra for garnish
  • 95g can John West Salmon Tempters – Olive Oil Blend, drained
  • 150g pouch Vetta Ready Pasta Fibre Penne
  • Shaved parmesan, for serving

Method

STEP 1
Heat oil in a non stick frypan over medium heat. Add garlic and cook for a few minutes or until fragrant but not browned. Add cherry tomatoes, chilli flakes and torn basil, cook for 3-4 minutes, stirring and pressing gently with the back of a spoon to release juices.
STEP 2
Meanwhile, cook pasta following packet directions. Add pasta to sauce and stir to combine.
STEP 3
Add John West Salmon, stir gently and season to taste. Serve with extra basil leaves and parmesan.
Tips
A little sugar can be added with tomatoes in STEP 1 if sauce is too acidic.
