Ingredients
- 1 teaspoon extra virgin olive oil
- 1 small clove garlic, crushed
- 8 cherry tomatoes, cut in half
- Pinch of chilli flakes or to taste
- 5 large fresh basil leaves, torn plus extra for garnish
- 95g can John West Salmon Tempters – Olive Oil Blend, drained
- 150g pouch Vetta Ready Pasta Fibre Penne
- Shaved parmesan, for serving
Method
STEP 1Heat oil in a non stick frypan over medium heat. Add garlic and cook for a few minutes or until fragrant but not browned. Add cherry tomatoes, chilli flakes and torn basil, cook for 3-4 minutes, stirring and pressing gently with the back of a spoon to release juices.
STEP 2
Meanwhile, cook pasta following packet directions. Add pasta to sauce and stir to combine.
STEP 3
Add John West Salmon, stir gently and season to taste. Serve with extra basil leaves and parmesan.
Tips
A little sugar can be added with tomatoes in STEP 1 if sauce is too acidic.
